Ube-Queso Cupcakes


To whomever coined the two flavors together (ube + cheese), kudos to you! The two flavors are a happy married couple!

Summer has just ended! (woohoo) The temperature is now tolerable, or as we call it here, presko. I opened your fridge and huwala, Jars and jars of bottled ingredients for halo-halo; and the ube halaya seemed untouched! Lightbulb! Ube cupcakes! I've tried making ube cupcakes before, but I only used McCormick's ube flavoring. The second attempt, I used both ube halaya and ube flavoring. I've read some blogs and they used melted ube ice cream. hmmm, sounds nice! I shall try it next time!

I added chopped cheddar cheese for the simple buttercream frosting and the two were a perfect match! The saltiness of the cheese hide some of the sweetness of the buttercream! Yum!

Recipe

For the cupcake

1 3/4 cups sifted all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1 cup granulated white sugar (or lesser if you'd want)
1/2 cup unsalted butter
2 large eggs
1/4 tsp salt
2/3 cup evaporated milk
2 tsp good tasting ube flavoring (my choice is McCormick's)
1/4 cup ube halaya

Procedure:

1. Mix all dry ingredients except the sugar and set aside.
2. Cream butter, sugar and ube till fluffy. Add eggs one at a time.
3. Add dry ingredients alternately with milk till everything is fully incorprated.
4. Add ube flavoring and mix well.
5. Makes 12 cupcakes.

For the frosting

1/4 cup chopped cheddar cheese
Grated cheese for ganish
2 cups powdered sugar
1/2 cup heavy cream
1/2 cup butter

Procedure:

1. Cream butter with sugar till fluffy,
2, Add cream and beat till stiff peaks form. (Don't overbeat)
3. Fold in cheese.

Frost cupcakes and add grated cheese as garnish.

  1. They look wonderful, how did you manage to avoid the outside of the cupcakes turning greenish?

  2. Bake for how long and oven temperature is?

    1. It should be 350°F and bake for 18-20 minutes or insert a toothpick in the middle of the cupcake, when comes out clean it's baked.
