Fun Funfetti


It's another boring weekend, and boring weekend screams bake time! Well, my brother have been bugging me to make a rainbow cake, well, I'd love to but my mom is kind of a health freak. She despises my red velvet cake, saying there's wayyy to much food coloring in it.. bad for the health. So, I guess stacking up layer by layers of different colored cakes would freak her out. I've been seeing funfetti cupcakes here and there, bloggers sharing their own recipes and all, so I tried it out. Well, it totally fun and so easy to make! Kids would love to spend time in the kitchen making these lovelies. :D

A funfetti cupcake is basically a cupcake baked with sprinkles in it. So fun! so colorful!

My brother helped me out with these by adding the sprinkles on the frosting haha but unfortunately, I only have photos taken from an ipod, poor resolution.. :( 

So all the pretty colors! wonderful!

The cupcake was really light and fluffy. Yummy, and the candy sprinkles added extra flavor to the cake! Well, just be careful when buying sprinkle. I have bought a really cheap pack and it was dead bitter! totally unedible. :(

My brothers love their cupcakes heavy, dense and really moist, but I like airy and fluffy ones, so they only eat my cupcakes when it is straight from the fridge. haha. 

It was also my first time to try the cooked frosting! Indeed! It was the best frosting we've ever tasted, usually, my brothers would remove the frosting but they totally loved this new recipe that they even complained for the poor serving! haha..I shall use this frosting all the time! Goodbye to confectioner's frosting :D The cooked frosting was really light and melts right away! Heaven! The combination of milk and butter is to die for!

Well...

For my vanilla cupcake, I used
1/2 cup butter
3 large eggs
3/4 cup sugar
1 tsp vanilla extract
1/2 cup butter. margarine 
1 1/2 cup all- purpose flour for moister cakes or use cake flour if you prefer a more airy and crumbly cake
2 tsp baking powder
1/4 tsp salt
1/2 cup buttermilk (milk + 1 tsp of vinegar, in my case, I always use pineapple cider)
1/2 cup candy sprinkles, if you think it is wayy too many, then by all means, lessen it.. depends to you :D  

Step 1: whisk together the flour, baking powder and salt in a bowl.
Step 2: In another clean bowl: With your electric mixer and hand mixer, cream the room temperature butter until fluffy, the add the 3/4 cup of sugar and continue beating, you'll know its done when the butter turned light in color. :D 
Step 2: then add the vanilla extract and mix till incorporated. Add the 3 eggs one at a time. Beating till each egg is well incorporated.
Step 3: ready your buttermilk. add 1/3 of the flour mixture to the batter and give it a quick mix, then add a third of the buttermilk, just do the process (flour mixture then milk then flour mixture) 
Step 4: the fold in the sprinkles! cold sprinkles straight from the fridge, just fold it in carefully, you would want to use cold ones since some sprinkles melt easily, you wouldnt want a mess of colors right?
Step 5: muffins pans! just 3/4 full 

then bake at 160 degrees C, I do not know the F equivalent thought.. haha
It takes me around 15 minutes, just check on it, if inserted toothpicks comes out clean, its all done!

Freshly baked! Just look at the wonderful colors! I found it really amusing that I decided to use lesser frosting on it so the colors would still be visible.

And sooo the cooked frosting it is!

For it, I used,

1/2 cup full fat milk (tastier)
3 tbsp flour
1/4 cup butter
1/3 cup sugar

Step 1: In a sauce pan, I cooked the milk and the flour together, whisking continuously until it is thick, so thick it almost forms a dough (be careful not to burn it!) 
Step 2: Chill the milk-flour goo, I popped it in the freezer, a cheat so it will cool really quick
Step 3: cream your butter, be sure the butter is not totally soft, it should still be cool and whisk-able haha.
Step 4: add the sugar to the butter and whisk away till it is again, really creamy and fluffy and light in color, be sure you whisk it really well, you wouldn't want your frosting to taste soo buttery, I don't really know the science of the whisking but it does stabilize the buttery taste. Trust me, I've handled wayy to much baking mishaps :D 
Step 5: Add the milk-flour goo to the creamed butter, be sure and totally sure it is cool inside and out. Stick your finger in the goo just to be sure, a hot spot could ruin your frosting by melting the butter. Whisk it well until it is in the right consistency, about 3-4 minutes. then give it a taste! It should be in the perfect balance of milk, sugar and butter. :D 

Then frost your cupcakes!!!
